Koi Knives was founded by Ramon Elzinga & Shannon Dolman in Adelaide, South Australia (just out of Adelaide near the Adelaide Hills). Our concept is to help people design knives which represent themselves - creating more joy in the kitchen - handles and blades that match you. We hope you like what we are up to. Shannon spent the last 20 years focusing on steel manufacturing (making all types of things with incredible steel). Ramon spent the last 20 years obsessing with cooking and knives (and occasionally cutting his finger).
